At the young age of 18, Yoshinobu Kobayashi (Koba-san) followed his father’s footsteps and apprenticed in a well-known Japanese Kaiseki Restaurant – Tsukiju Tamura. It was there that Koba-san had practiced and developed his exceptional skill in harmonizing the delicate art of Kaiseki.
By using only the fresh seasonal ingredients from Japan and the West Coast, Kaba-san balances the taste, texture, appearance and colors of food to prepare dishes that are beautifully arranged and garnished . Often with real leaves and flowers, as well as edible garnishes designed to resemble natural plants and animals.
